    This one is inspiration from my finds at my new, local farmer's market. Hot take, but I think mayo is delicious, and I truly don't think you can tell that there isn't mayo in this recipe! ⏱️ Total Time: 10 minutes

    Ingredients

    Ingredients

    • 1 large chicken breast, cooked and chopped into cubes (I used rotisserie from Costco) or 2 cans of tuna
    • 1 scallion finely chopped (greens and whites)
    • 1 heaping tbsp hummus
    • 1/4 C pomegranate seeds
    • 1/4 C Greek yogurt
    • 3 tbsp finely chopped red onion
    • 1/C toasted/chopped walnuts
    • 1 tbsp mustard
    • dashes of hot sauce
    • salt, pepper, and dry dill (optional) to taste

    Instructions

      Simply mix all ingredients together in a bowl.

      Serve with your favorite salad or crackers. Enjoy!
