Pomegranate Chicken Salad
This one is inspiration from my finds at my new, local farmer's market. Hot take, but I think mayo is delicious, and I truly don't think you can tell that there isn't mayo in this recipe! ⏱️ Total Time: 10 minutes

- 1 large chicken breast, cooked and chopped into cubes (I used rotisserie from Costco) or 2 cans of tuna
- 1 scallion finely chopped (greens and whites)
- 1 heaping tbsp hummus
- 1/4 C pomegranate seeds
- 1/4 C Greek yogurt
- 3 tbsp finely chopped red onion
- 1/C toasted/chopped walnuts
- 1 tbsp mustard
- dashes of hot sauce
- salt, pepper, and dry dill (optional) to taste
Instructions

Simply mix all ingredients together in a bowl.
