Pomegranate Chicken Salad
A delicious chicken salad inspired by farmer's market finds. You won't believe there's no mayo in this recipe!

Ingredients
Ingredients
- 1 large chicken breast, cooked and chopped into cubes (I used rotisserie from Costco) or 2 cans of tuna
- 1 scallion finely chopped (greens and whites)
- 1 heaping tbsp hummus
- 1/4 C pomegranate seeds
- 1/4 C Greek yogurt
- 3 tbsp finely chopped red onion
- 1/C toasted/chopped walnuts
- 1 tbsp mustard
- dashes of hot sauce
- salt, pepper, and dry dill (optional) to taste
Instructions
- Simply mix all ingredients together in a bowl.
- Serve with your favorite salad or crackers. Enjoy!
