Shrimp Fajitas
Low-carb, super versatile, and perfect for meal prep during a busy week. I always like to throw in extra veggies I have on hand! The easiest tip to make these guilt-free is to use greek yogurt with all of the same seasonings to give that same sour-cream kick guilt-free! ⏱️ Total Time: 35 minutes

Ingredients
Grilled Shrimp
- 1 LB Raw Shrimp
- 1 Tbsp Dill
- 2 Tbsp Cilantro Finely Chopped
- 1 Tsp Cumin Powder
- 4 Minced Garlic Cloves
- 1/2 Tsp Chili Flakes
- 1/2 Lime Juiced
- 1 Tbsp Olive Oil
- Salt & Pepper
Baked Veggies
- 1 Sliced Zucchini
- 1/2 Sliced Red Onion
- 1 Sliced Red Bell Pepper
- 1 Sliced Green Bell Pepper
- 4 Minced Garlic Cloves
- 1 Tbsp Chili Flakes
- Salt & Pepper
- Olive Oil
Assembly
- Warm Tortillas
- Greek Yogurt
- Shredded Cheese
- Fresh Cilantro
- Pico de Gallo
- Avocado Slices
- Fresh Lime Wedges
Instructions

Clean and devein shrimp. Mix with all spices and olive oil in bowl.

Marinate veggies with garlic, chili flakes, salt, pepper, and olive oil on baking sheet.

Bake veggies at 400°F for 15-20 minutes until crisp but cooked through.

Grill shrimp: Cook 2 minutes per side on grill pan brushed with olive oil.

Warm tortillas.

Assemble tacos: 1-2 shrimp per taco, baked veggies, Greek yogurt, cheese, cilantro, pico, and avocado.

Squeeze fresh lime over tacos. Enjoy!
