- Clean and devein shrimp. Mix with all spices and olive oil in bowl.
- Marinate veggies with garlic, chili flakes, salt, pepper, and olive oil on baking sheet.
- Bake veggies at 400°F for 15-20 minutes until crisp but cooked through.
- Grill shrimp: Cook 2 minutes per side on grill pan brushed with olive oil.
- Warm tortillas.
- Assemble tacos: 1-2 shrimp per taco, baked veggies, Greek yogurt, cheese, cilantro, pico, and avocado.
- Squeeze fresh lime over tacos. Enjoy!
