High Protein Avocado Toast

  1. Bring small pot of water to boil. Carefully add eggs and boil for 6.5 minutes for soft-boiled.
  2. Remove eggs and run under cold water until cool. Carefully peel shells.
  3. Toast bread slices.
  4. In bowl, mash avocado with lemon juice, sriracha, Greek yogurt, salt, and pepper until spreadable.
  5. Spread mixture evenly on both toasts.
  6. Cut eggs in half and place on toasts (cut on toast so yolk doesn't run).
  7. Garnish with microgreens/scallions and black pepper. Enjoy!
