High Protein Avocado Toast
Savory breakfasts tend to keep me full and energized throughout the day. I always opt in for avocado and a soft boiled egg because it is just SO GOOD together. This recipe replaces my protein shake I usually take after a workout because I add the extra protein from Greek yogurt. The yogurt adds a tangy kick to the avocado toast, and you definitely will keep going back for this breakfast over and over again! Best part - it's super simple and you probably already have all of the ingredients in your fridge. Dress it up or keep it simple, it never disappoints. ⏱️ Total Time: 12 minutes

- 2 Slices Multigrain Bread
- 2 Eggs
- 1/2 Avocado
- 1/4 Fresh Lemon
- 1 Tsp Sriracha or Hot Sauce
- 2-3 Tbsp Greek Yogurt (FAGE)
- Salt & Pepper
- Optional: Microgreens or Scallions
Instructions

Bring small pot of water to boil. Carefully add eggs and boil for 6.5 minutes for soft-boiled.

Remove eggs and run under cold water until cool. Carefully peel shells.

Toast bread slices.

In bowl, mash avocado with lemon juice, sriracha, Greek yogurt, salt, and pepper until spreadable.

Spread mixture evenly on both toasts.

Cut eggs in half and place on toasts (cut on toast so yolk doesn't run).

Garnish with microgreens/scallions and black pepper. Enjoy!
