- Toast the peppercorn, cumin, and coriander on medium heat for 4-5 minutes until fragrant. Blend into a fine powder.
- Add all curry paste ingredients into a high power blender. Blend until smooth paste forms.
- Heat coconut oil on medium heat. Add Thai chili, onion, and ginger garlic paste. Sauté for 5 minutes.
- Add 4 Tbsp of green curry paste. Cook for 3-4 minutes until aromatic.
- Pour in coconut milk and fish sauce. Bring to a boil.
- Add vegetables and protein. Simmer for 15-20 minutes until cooked through.
- Garnish with fresh cilantro and lime. Serve over jasmine rice or noodles.
