Blueberry Banana Pancakes
I made these super easy pancakes for breakfast last week with all of leftover blueberries I had in my fridge. Let me tell you, they turned out full of sweetness from the added sugar in the bananas along with a touch of honey that I put into my blueberry compote. I occasionally have a sweet tooth, and this definitely felt like a throwback to an IHOP breakfast that I used to get during the holidays on those chilly mornings. ⏱️ Total Time: 25 minutes
Ingredients
Pancakes
- 1 C Almond Flour
- 1 Tsp Baking Powder
- 1/4 C Milk
- 1.5 Tsp Vanilla Extract
- 2 Eggs
- Pinch of Salt
- Butter for Pan
Blueberry Compote
- 1 Carton Blueberries
- 2 Tbsp Honey
- 1/2 Tsp Vanilla
Toppings
- 1 Sliced Banana
- Sliced Almonds
- Maple Syrup
Instructions

Mix all pancake ingredients in bowl.

Heat pan with butter on medium heat.

Add batter in 1/3 cup increments. Flatten with spoon to form pancake shape.

Cook 2-3 minutes per side until golden brown.

Make compote: Add blueberries, honey, and vanilla to saucepan on medium heat. Simmer 7-8 minutes, stirring constantly.

Stack pancakes, layering banana slices and blueberry compote between each one.

Top with almonds and maple syrup. Enjoy!
