Blueberry Banana Pancakes

I made these super easy pancakes for breakfast last week with all of leftover blueberries I had in my fridge. Let me tell you, they turned out full of sweetness from the added sugar in the bananas along with a touch of honey that I put into my blueberry compote. I occasionally have a sweet tooth, and this definitely felt like a throwback to an IHOP breakfast that I used to get during the holidays on those chilly mornings.

INGREDIENTS

Serves 2

Pancakes

  • 1 C Almond Flour

  • 1 Tsp Baking Powder

  • 1/4 C Milk of Choice

  • 1.5 Tsp Vanilla Extract

  • 2 Eggs

  • Pinch of Salt

  • Butter for Pan

Blueberry Compote

  • 1 Carton of Blueberries

  • 2 Tbsp Honey

  • 1/2 Tsp Vanilla

Optional

  • 1 Sliced Banana

  • Sliced Almonds

  • Maple Syrup

NSTRUCTIONS

  1. Mix all of the pancake ingredients together in a bowl. Heat a pan with a touch of butter on medium heat.

  2. Add in the batter to the pan in 1/3 cup increments and use a spoon to flatten the mixture to resemble a pancake. Flip after 2-3 minutes till cooked on both sides.

  3. To make the compote, add in the blueberries, honey, and vanilla into a sauce pan on medium heat. Let it simmer while continuing to mix for about 7-8 minutes.

  4. To assemble, stack one pancake, a few slices of banana, and a few spoonfuls of blueberry compote. Keep repeating till you’ve stacked all of the pancakes. Enjoy!
