Pomegranate Chicken Salad
This one is inspiration from my finds at my new, local farmer’s market. Hot take, but I think mayo is delicious, and I truly don’t think you can tell that there isn’t mayo in this recipe!
INGREDIENTS
Serves 2-3
Tacos & Toppings
1 large chicken breast, cooked and chopped into cubes (I used rotisserie from Costco) or 2 cans of tuna
1 scallion finely chopped (greens and whites)
1 heaping tbsp hummus
1/4 C pomegranate seeds
1/4 C Greek yogurt
3 tbsp finely chopped red onion
1/C toasted/chopped walnuts
1 tbsp mustard
dashes of hot sauce
salt, pepper, and dry dill (optional) to taste
RECIPE
This one hardly requires a recipe! Simply mix it all up, and serve with your favorite salad or crackers. Enjoy!
